Peppermint Chocolate Chunk Cookies

So, a couple of weeks ago when I was feeling especially creative and inventive, I made up a delicious peppermint chocolate chunk cookie recipe. It is fairly easy to make and I hope you enjoy it!

Ingredients:
2 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup cane sugar
3/4 cup brown sugar, packed
2 large eggs
2 tsp peppermint extract
12 ounces semi-sweet chocolate chunks (if you don't have chocolate chunks, semi-sweet chocolate chips work fine)
Procedure:
1. Preheat oven to 375 degrees Fahrenheit and spray two cooking sheets.
2. In a small bowl, combine all purpose flour, baking soda and salt.
3. Beat butter, cane sugar, and brown sugar in a large mixing bowl. Then add eggs and peppermint extract one at a time.
4. Gradually beat in dry ingredients until fully incorporated. Add chocolate chunks.
5. Drop by tablespoon onto prepared sheets (about 1 1/2-2 inches apart) and pop them into the oven for 9-11 minutes or until golden brown.
6. When the cookies are out of the oven, let them cool on a wire rack for about 10 minutes.
